Cajun Spiced Chicken Bites Recipe

These gluten free cajun spiced chicken bites are full of protein, and are air fried so they’re a healthier alternative to regular fried chicken. They have only a few ingredients so they are easy to make and taste great as part of a meal or on their own as a snack with your favourite sauce.

Makes 4-6 serves

Ingredients:

  • 8 chicken thighs, chopped into medium-large chunks
  • 1.5 cups of gluten free bread crumbs (I used corn crumbs but any work)
  • 1 tablespoon of turmeric
  • 1.5 tablespoons of cajun seasoning
  • 1.5 teaspoons salt
  • 1 teaspoon pepper
  • olive oil, for air frying

How To:

  1. In a Zip lock bag, add the crumbs, turmeric, cajun seasoning, salt and pepper and shake to mix evenly.
  2. Add the chicken, seal the bag and shake for a few minutes to evenly coat the chicken in the spice and crumb mix.
  3. Place chicken down in a single layer in the air fryer, and lightly drizzle with olive oil. You may need to cook the chicken in batches.
  4. Cook for 15 minutes, or until the chicken is golden brown and crunchy on the outside. Enjoy!

Serving Suggestions:

  • With brown rice, honey soy sauce and steamed greens
  • With ranch dipping sauce
