Satay Chicken Bowl

This satay chicken bowl recipe has a great balance of macronutrients to leave you feeling balanced and satiated. It is the perfect easy dinner or lunch, and works great as a healthy and delicious meal prep option.

Serves 4

Ingredients:

  • 6 chicken thighs, diced
  • 1 garlic clove, finely diced
  • 1 onion, finely diced
  • 50ml of GF soy sauce
  • 1/4 cup of natural peanut butter
  • 150 ml of coconut milk
  • 1 bunch of Bok Choy, or greens of your choice
  • 4 cups of cooked rice of your choice

How To

Chicken:

  1. Heat a nonstick frypan on high heat and add in the diced chicken thighs. Cook for a few minutes, stirring occasionally to evenly brown the chicken.
  2. Stir in the diced garlic and onion. Reduce to medium heat, and stirring occasionally, cook for 10-15 minutes, or until the chicken is cooked through.
  3. In a small bowl mix together the soy sauce, peanut butter and coconut milk. Pour over the cooked chicken and reduce heat to low. Allow to simmer for 5 minutes.

Steamed Greens:

  1. Fill a saucepan half way with water. Bring to a boil.
  2. Place a steamer on top of the saucepan and add in the greens. Cover with a lid and steam for 3-5 minutes, or until the greens are cooked through.

Serve the chicken mixture with brown rice and greens.
