Vanilla Protein Granola Bars Recipe

These protein bars are the perfect snack for when you’re after something sweet, light and healthy. Full of whole-food nutritious ingredients, these are easy to make and can be made to your own liking by adding your favourite seeds, dried fruit and type of protein powder.

Makes 1 large batch

Ingredients:

  • 2 cups of puffed buckwheat
  • 1/2 cup of pumpkin seeds
  • 1/4 cup of cacao nibs
  • 1/4 cup of hemp seeds
  • 1 cup of dried blueberries
  • 1 teaspoon of salt
  • 1 cup of vanilla protein powder
  • 1 cup of rice malt syrup

How To:

  1. Preheat oven to 180oC. Line a large slice tray with baking paper.
  2. In a large mixing bowl combine the buckwheat, pumpkin seeds, cacao nibs, hemp seeds, dried blueberries, salt and protein powder.
  3. Fold the rice malt syrup through the mixture and combine until the mixture is sticky and all ingredients are evenly coated in the syrup.
  4. Press the mixture firmly into the slice tray and bake in the oven for 15 minutes, or until golden brown on top.
  5. Once removed from the oven, allow to cool and harden on the bench before removing from the tray and slicing.
